Have you ever dreamed of wandering through a sun-drenched olive grove? Dreams come true on the olive oil tasting and tour at Proyecto los Aires near Toledo.
One recent Sunday the Madrid Food Tour team spent a day among the olive trees, learning about Spain’s green gold and enjoying the beautiful autumn sunshine. We came away with a deeper appreciation for the artisanal producers who are passionate about sustainable farming and are committed to bringing the very best of the their land to our tables.
Among the olive trees
Proyecto los Aires is the product of two biologists’ desire to go back to the land and rescue a field of heritage olive trees. Guillermo and Laura have set up shop making organic, high quality, extra virgin olive oil with the sun-ripened fruits of Guillermo’s family’s land. The two are passionate about all things olive oil. Their mission is to produce excellent quality olive oil using sustainable methods and to educate visitors about olive oil production and consumption.
All about EVOO
As part of the mission is educational, beyond producing incredible cornicabra varietal oils, they have created a wonderful olive oil tourism experience on their land.
The experience includes:
- A walk through the olive groves with an explanation of the history of the land.
- A very informative presentation about the cultivation and harvest of the olives.
- A delicious tasting of local products all drizzled with their flavorful olive oil.
- A lesson about what flavors and characteristics to look for when choosing an olive oil.

What to expect
Proyecto los Aires is on the outskirts of the tiny village of Arcicóllar, about an hour southwest of Madrid. The town is surrounded by a stark landscape of rolling hills, vineyards and olive groves. Visiting the grove is a wonderful way to get out of the city and connect with the land that produces so many great foods and wines.
You can go by car, Guillermo and Laura can help with directions or meet you at the entrance to the town and you can follow them to the olive grove. There is also bus service from Madrid and Toledo. You can make a tour reservation online through the PLA website.
